We roast so many vegetables are all are so delicious. Now try roasting pumpkins for a special treat! Delicata squash is also wonderful done this way. Since you have the oven on anyway, go ahead and roast some garlic heads, onion slices, other vegetables as desired. It is endless! 1-2 pumpkins or Delicata squash (or whatever ones you have!) Preheat oven to 350 degrees. Wash the pumpkin, and then cook in microwave for 2 minutes to make it easier to slice. When cool enough to handle, slice into serving sized wedges removing the peeling and seeds as you work. Sprinkle with a bit of olive oil and pinches of salt. Arrange the slices with a flat side down on a baking sheet with sides. Bake about 30 minutes, or until tender and browning on the bottom side. Serve as a wonderful vegetable side dish.
