Vegetables for Dessert! ???

From Dorothy McNett's recipes at Why not??? This is so good dolloped with a bit of whipped cream or ice cream.

1/2 cup unsalted butter
1/3 cup raw sugar
1/2 teaspoon sea salt
1/2 teaspoon vanilla extract
1 cup unbleached all purpose flour
1/2 cup orange marmalade, or Roasted Onion Garlic Jam, etc.

8 oz. cream cheese
1/2 cup raw sugar
1 egg
1/2 teaspoon vanilla extract

3-4 cups assorted chopped raw vegetables, such as zucchini, carrot, cauliflower, yellow squash, etc. or even fresh peas
1 small apple, chopped
1/2 cup dark chocolate chips
1/2 teaspoon cinnamon
1/4 cup raw sugar

whipped cream or ice cream
pumpkin butter

Preheat oven to 400 degrees. In food processor with steel chopping blade in place, combine the butter, sugar, salt and vanilla to cream it up a bit. Add the flour and blend just until mixture resembles coarse crumbs. (or place ingredients in bowl and use your fingers to combine) Press into the bottom and about 1 inch up the sides of a 9 inch springform pan or similar sized baking / pie dish. Spread the jam over the bottom. In a batter bowl, soften the cream cheese in microwave for 30-40 seconds. Add sugar, egg and vanilla and blend to make a smooth mixture. Spread over the jam. In a bowl, combine the chopped vegetables, apple, chocolate chips, cinnamon and sugar. Arrange evenly over the filling. Bake at 400 degrees for 10 minutes, then reduce heat to 350 and continue baking for 30-40 minutes more. Allow to cool at room temperature. Serve with whipped cream or ice cream, if desired. Pumpkin butter is also great!
