T-Bone Steak with Sweet and Hot Peppers

From Dorothy McNett's recipes at www.dorothymcnett.com. A simple saute of your choices of fresh peppers, either hot and spicy or sweet and mild, or both! There are lots of fresh pepper varieties to choose from, and mixing matching is fun!

1-2 T-bone steaks
1 tablespoon extra virgin olive oil
freshly ground pepper
sea salt

1-2 tablespoons grapeseed oil
2-3 cloves garlic, minced
1 red or green sweet pepper, chopped
1 - 2 red or green jalapeno or other hot peppers, chopped
1-2 tablespoons freshly grated Parmigiano-reggiano cheese
1/2 - 1 teaspoon aged balsamic (aged at least 8 years)
snipped fresh parsley

Coat each steak with the olive oil and sprinkle liberally with freshly ground pepper and some sea salt. Set aside at room temperature 15-20 minutes. In meantime, heat the grapeseed oil in a heavy bottomed saute pan. Cook and stir the garlic and chopped peppers 4-5 minutes. Stir in the grated cheese. Remove from pan and place on serving platter. Reheat the saute pan, adding just a bit more grapeseed oil if needed. Saute the seasoned steaks 2-3 minutes per side, or to your desired doneness. Remove steaks to the serving plate. Add the balsamic to the pan, using a silicone spatula cook and stir just to bring up the tasty browned bits in the pan and to make a drizzling sauce to sprinkle over the steaks. Garnish with snipped parsley and serve.
