Salsa Quick and Easy, Mild or Hot (choose your chiles!)

From Dorothy McNett's recipes at This is mild and makes a nice companion to seafood, chicken, etc. Use as many or as little garlic cloves as desired! Also great with fajitas by adding some roasted red (hot or sweet) peppers, as desired.

1 tablespoon extra virgin olive oil
1 - 4 garlic cloves, mashed
1 (7 oz.) can diced green chiles
2 tablespoons all purpose unbleached flour
1/2 teaspoon cumin
1/2 teaspoon sea salt
1 cup water

In glass or ceramic batter bowl heat the oil and garlic 1 minute in microwave. Whisk in remaining ingredients. Cook 2 minutes. Whisk. Cook another 2-3 minutes, or until slightly thickened. Serve hot, warm or allow to cool.
