Salsa Quick and Easy
From Dorothy McNett's recipes at www.dorothymcnett.com. This is mild and makes a nice companion to seafood, chicken, etc. Use as many or as little garlic cloves as desired! Also great with fajitas by adding some roasted red (hot or sweet) peppers.
1 tablespoon extra virgin olive oil
In glass or ceramic batter bowl or large measuring cup, heat the oil and garlic 1 minute. Whisk in remaining ingredients. Cook 2 minutes. Whisk. Cook another 2-3 minutes, or until slightly thickened. Serve hot, warm or allow to cool. A great dipping sauce for tortilla chips, etc.
