Halloween Spider Meatloaf with Bloody Beets

1 pound ground beef
2 slices whole wheat bread
1/2 red or green pepper
1 medium onion
3-4 cloves garlic
2-3 sprigs parsley
1/2 cup tomato sauce or catsup
1/2 teaspoon pepper
1/2 teaspoon sea salt

1/4 cup catsup
1 tablespoon Dijon style mustard
1 tablespoon sugar
1 portobella mushroom
fresh green beans
pimiento stuffed green olives

1-2 purple beets
1/2 teaspoon butter or olive oil

Preheat oven to 350 degrees. Chop the bread, pepper, onion, garlic and parsley finely. (Use processor or chef knife) Combine with the ground beef along with the tomato sauce, pepper and salt. Loosely pack the mixture into a loaf pan, reserving about 1 tablespoon. Mix together the catsup, mustard and sugar and pour evenly over the meat loaf. Gently clean the mushroom, removing the stem. Place on top of the meatloaf and fill with the reserved 1 tablespoon meat mixture to make the spiders belly. Arrange 8 green beans to be the legs. To make it even more spooky, slice one olive in half and use to make eyes. (Imagination works here!) Bake about 35-40 minutes. While it bakes, wash and peel the beets. Slice or dice and place in a glass or ceramic batter bowl, adding the butter or oil. Cover with a glass plate and cook in microwave 5 - 6 minutes, or until tender. Set aside. When meat is done, allow to cool a bit before slicing and serving, garnishing with more olive eyes, cooked beets, etc. Just have fun, it will taste wonderful no matter how it looks!
