Black Rice in Orange Peppers

From Dorothy McNett's recipes at www.dorothymcnett.com. For Halloween, cut the peppers in jack-o-lantern faces and then stuff with the cooked black rice.

1 cup black rice (Forbidden Rice)
2 1/2 cups water
1 teaspoon olive oil
1/2 teaspoon sea salt

2-4 medium orange peppers
drizzles of olive oil
pinch of salt

Combine the rice,water, oil and salt in a glass or ceramic batter bowl. Cover. Cook in microwave on full power for 5 minutes, and then on half power for 20-22 minutes,, or until rice is tender and the water has been absorbed. Or, cook in automatic rice cooker, or cook in a heavy bottomed saucepan, simmering 20-25 minutes.
Cut the tops off of the peppers, remove the seeds and membrane. With a small pointed knife, cut eyes, nose and mouth. Place tops back on and arrange peppers on a glass or ceramic plate. Cook in microwave, using 1 - 1 1/2 minutes per pepper to heat and soften a bit. Stuff with the cooked rice, garnish and serve.
