Samoan Fish Salad (Oka i'a )

From Dorothy McNett's recipes at Use the freshest fish you can get, recommended is tuna or snapper. Marinate the fish in citrus juice (lime preferred) for 2 hours or even overnight to "cook" the fish.

1 pound fresh tuna or snapper
1/2 cup freshly squeezed lime or lemon juice
1 large shallot or 1/2 onion
3-4 green onions
2 tomatoes
1 medium cucumber
1/2 - 1 red bell pepper
1 1/2 cups coconut milk
1/2 teaspoon sea salt
fresh greens such as Bibb lettuce, etc.
fresh parsley

Wash the fish and cut into smallish cubes. Place in a glass or ceramic bowl and cover with the lime juice. Refrigerate 2 hours, or more. When ready to prepare, finely dice the onions, tomatoes, cucumber and red pepper and place in a bowl. Drain the fish from the citrus juice and combine the fish with the vegetables. Add the coconut milk and salt. Arrange attractively lettuce. Snip on the fresh parsley and serve.
