Herring Platter (Familjens Raddning or "Save The Family")

From Dorothy McNett's recipes at www.dorothymcnett.com. In other words, clean out the refrigerator!

2-3 canned herring fillets
1/4 cup sour cream
1/4 cup mayonnaise
2 hard cooked eggs
1/2 cup pickles (gherkins)
1/2 cup pickled beets
1/4 cup chopped fresh parsley
rye bread slices or crackers

Drain the herring and arrange on a platter. If the herring pieces are large and thick, make diagonal cuts 1/2 inch apart. Combine the sour cream and mayonnaise and spread over the herring. Dice up the egg whites separately from the egg yolks and arrange them around the fish along with some pickles, beets, and parsley. Serve with bread or crackers.
