Pickled Beets (Syltede Rodbeder)

2 medium sized beets
Scrub the beets and then peel with a vegetable peeler. Cut into thin round slices and place in a glass or ceramic bowl. Cover with a glass lid or plate. Cook in microwave 4-5 minutes, or until tender. Set aside. In a stainless steel saucepan, combine the vinegar, water, sugar, salt and pepper. Bring to a boil, reduce to a soft boil and cook about 2-3 minutes to dissolve the sugar and blend the flavors. Pour over the beets. Cool to room temperature and then refrigerate overnight.
