Chocolate Apple Meringue Cookies

From Dorothy McNett's recipes at www.dorothymcnett.com. Makes 14, with less than 2 grams of carbs each.

1-2 apples (to make 1 cup of cooked)
2 egg whites
1 tablespoon unsweetened cocoa powder
1/2 cup hemp seeds

Cut the apple or apples into small chunks, removing the core and seeds but leave the peeling on. Place in a glass or ceramic batter bowl, cover, and cook in microwave about 5 minutes, or until apple pieces are tender. Allow to cool. Mash with a fork or a blender, or food process and measure out 1 cup. Preheat oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper. Using electric beater, beat egg whites until high, light, and stiff peaks form. Gradually beat in the cool apples and then the cocoa and hemp seeds. Just mix to blend well. Using a tablespoon, drop batter onto baking sheets. Do not spread out, just dollop. Bake 15-20 minutes, or until they are set up and nicely browned. Allow to cool before removing from the pan.
