Kielbasa with Guacamole

2-3 soft ripe avocados
zest of 1 lemon or lime
1 teaspoon lemon or lime juice
2-3 green onions, thinly sliced
1 small tomato, or a several baby tomatoes
1/4 - 1/2 teaspoon sea salt
1/4 teaspoon cayenne or dried chipotle
2-3 tablespoons chopped fresh cilantro
3-4 kielbasa sausages, or other sausages as desired
1 teaspoon grapeseed oil
chips, bread slices, vegetable sticks, apple slices, etc. as desired

Cut avocados in half, remove the pits and scoop out the flesh into a bowl. Using a potato masher, (or a fork or spoon) blend the avocado with the zest and juice of the lemon or lime. Add the green onions, tomato, salt, cayenne and cilantro. Blend well, taste and correct the seasonings to your tastes. Scoop into a nice serving bowl or stemmed glass. Set aside. Cut the sausages into 1 inch slices. In heavy bottomed skillet, heat the oil and then add the sausages slices. Brown gently on each side, usually about 30 seconds per side. Place the bowl of guacamole on a beautiful platter and arrange the sausage slices around it so that people can easily dip and dunk, as desired. Crackers, chips, vegetable sticks, etc. also make a great addition.
