Apple, Sage, and Onion soup
From Dorothy McNett's recipes at www.dorothymcnett.com. A perfect fall / winter soup, especially if you have made some delicious homemade turkey stock from your Thanksgiving bird. Feel free to adjust the proportions, etc. Just taste to get it "Perfect! Just the way I wanted it!"
1 - 2 firm apples
Wash the apple or apples. Cut into small pieces, do not peel. Dice the onion and garlic. Heat a heavy bottomed saute or stock pot, adding the oil or butter. Add the dices apples, onion and garlic. Cook and stir over medium-low heat for about 10 minutes or even more, to start the browning (caramelization) of the onions. Add the sage and stock. Bring to a boil, reduce to simmer. Cook about 3-4 minutes to blend the flavors, adding salt and pepper as needed.
