Soup for Santa Claus Around the World!

From Dorothy McNett's recipes at A perfect fall / winter soup. Feel free to adjust the proportions, etc. Just taste to get it "Perfect! Just the way I wanted it!"

1 - 2 firm apples
1 onion
2-3 cloves garlic
2-3 tablespoons extra virgin olive oil, or butter
1/2 teaspoon dried sage, or 4-5 fresh sage leaves diced
3-4 cups of a good quality ready made vegetable or chicken stock
salt and pepper, as needed or desired

Wash the apple or apples. Cut into small pieces, do not peel. Dice the onion and garlic. Heat a heavy bottomed saute or stock pot, adding the oil or butter. Add the apples, onion and garlic. Cook and stir over medium-low heat about 10 minutes or even more, to start the browning (caramelization) of the onions. Add sage and stock, bring to a boil, reduce to simmer. Cook about 3-4 minutes adding salt and pepper as needed.
