Soup for Santa Claus Around the World!
From Dorothy McNett's recipes at www.dorothymcnett.com. A perfect fall / winter soup. Feel free to adjust the proportions, etc. Just taste to get it "Perfect! Just the way I wanted it!"
1 - 2 firm apples
Wash the apple or apples. Cut into small pieces, do not peel. Dice the onion and garlic. Heat a heavy bottomed saute or stock pot, adding the oil or butter. Add the apples, onion and garlic. Cook and stir over medium-low heat about 10 minutes or even more, to start the browning (caramelization) of the onions. Add sage and stock, bring to a boil, reduce to simmer. Cook about 3-4 minutes adding salt and pepper as needed.
