Herbed Split Pea Soup

2 tablespoons olive oil
2 medium onions, chopped finely
1-2 tablespoons finely snipped thyme, or other fresh herbs
1/2 teaspoon sea salt
freshly ground pepper
2 cups green or yellow split peas, or a combination
5 cups broth or water
zest and juice of 1 small lemon or orange
paprika for sprinkling (sweet, hot, or smoked!)

In heavy bottomed stock pot, heat oil. Add diced onions and thyme. ook and stir over medium heat a few minutes to soften and to start browning of the onions. Add the salt, pepper, peas, broth or water. Bring to a boil, reduce to simmer and gently simmer for about 30 minutes, Add the zest and juice. For a great texture, pour half of the soup into a food processor with steel chopping blade in place and whirl to puree. Add back to the remaining soup. Reheat. Scoop into individual soup bowls and sprinkle with paprika.
