Cheese Sauce / Dip

From Dorothy McNett's recipes at Your choice of cheese determines what this sauce will be! For a great appetizer, slice up some fresh small zucchini and other vegetables and drizzle with this sauce, or use as a dip.

3 tablespoons unsalted butter, or olive oil
3 tablespoons unbleached all purpose flour
1 1/4 cups milk (low-fat or regular or even half and half)
1/4 teaspoon pepper or Tabasco
1/4 teaspoon sea salt
1/2 cup grated cheese (cheddar, swiss, Cotswald, combinations, whatever!)

Heat butter or oil 30 seconds in batter bowl inn microwave. Whisk in flour, milk, pepper and salt. Cook 2 minutes. Whisk well. Cook another 2 minutes and whisk. Add another minute or until thickened, whisking in cheese. If needed, heat another 1 minute to melt the cheese, it depends on the kind of cheese as some melt faster and easier than others. Just do not over cook it, gentle! Serve over vegetables, or use as a dip for raw vegetables.
