California Roll / Crab and Avocado Inside Out Sushi

From Dorothy McNett's recipes at www.dorothymcnett.com. It is known as "inside out sushi" because it is rolled with the rice on the outside, and is called Uramaki.

Sushi rice, cooked and cooled
nori sheets
2-3 tablespoon mayonnaise
2-3 tablespoon soy sauce
small pieces of fresh cooked crab, in strips as much as possible
avocado, sliced into long strips
2-3 tablespoons sesame seeds or hemp seeds, etc.

wasabi for serving
pickled ginger root slices, for serving

Cut a nori sheet in half and place on a bamboo sushi rolling mat. Dip your fingers into some cold water so that they are damp. Using your fingers, spread about 1 cup of the cooled rice over the entire nori sheet, having the rice about 1/4 inch thick. Place a piece of plastic wrap over the rice and very carefully flip it over. Combine the mayonnaise and soy sauce in a bowl and lightly spread a thin film of it over the nori. Arrange the crab and the avocado in a long line close to the bottom of the nori. Roll tightly, using your fingers to help hold it in shape and make sure the plastic wrap does not get rolled up into the whole thing! Use the mat to press the roll tightly together. Sprinkle with sesame or hemp seeds. Slice and serve with wasabi and ginger slices on the side.
