Cranberry Sauce or Salad

From Dorothy McNett's recipes at www.dorothymcnett.com Make this ahead, allow to cool. Serve as a relish with meats, etc. BUT, also it makes a great salad dressing to pour over fresh crispy greens!

1 (12 oz.) package fresh cranberries
3/4 cup raw sugar
2 tablespoons brandy, orange juice, or orange flavored liqueur

for a salad:
use about 1/2 cup of the above sauce (warm or cold)
1/4 - 1/3 cup extra virgin olive oil
1/4 teaspoon sea salt
crispy romaine leaves, etc.
1-2 grated carrots
1-2 thinly sliced green onions

For the sauce: Combine all ingredients in large batter bowl. Microwave on High 7 minutes. Stir. It's done! Serve hot, cool, or cold.

For the salad: In glass measuring cup, combine 1/2 cup of the sauce, olive oil and salt. Tear up the romaine and place in a beautiful salad bowl. Add the grated carrots and green onions. Toss in the dressing and serve.
