Love, Love Me "Dough" (Cookies for Every Occasion!)

So quick and easy to make, however the dough is easier to work with if you take the time to refrigerate it several hours or overnight and then roll it out, using whatever sizes and shapes of cookie cutters you have and wish to use! Or simply roll the dough out and cut it with a knife into interesting shapes and sizes. Frost as desired, but honest and truly with these ingredients they are so flavorful and crispy they need no icing! Inspired by the Beatles 1963, "Love, Love Me Do!"

1/2 cup unsalted butter, softened
3/4 cup raw sugar (turbinado)
1 egg
1 teaspoon baking powder
1/2 teaspoon sea salt
1/4 cup sesame or hemp seeds
2 cups unbleached whole wheat all purpose flour
1/4 cup milk or hemp milk or flax milk...
1/2 teaspoon real vanilla extract, or vanilla bean paste

If butter is cold, place in glass or ceramic batter bowl and soften in microwave on half power (power level 5) for 30-45 seconds. Add the sugar, and using a silicone spatula or wooden spoon, blend butter and sugar to get it smooth. Blend in the egg and mix very well. Blend in the baking powder, salt, and hemp seeds and blend to completely mix the ingredients evenly into the batter. Add the flour, milk, and vanilla and blend well. Shape dough into a ball and cover completely with waxed paper or plastic wrap and refrigerate 2-3 hours, or even overnight. When ready to bake, preheat oven to 375 degrees. Line 2 baking sheets with silicone baking mats or parchment paper. Cut the ball of dough in half. Sprinkle work surface (pastry cloth works great!) with flour. Roll one of the halves out flat, about 1/8 inch thick. Cut as desired and place on baking sheets. Repeat until all dough has been shaped. Bake 10-12 minutes, perhaps even a minute or two more, or until they are lightly browned and crisp. Remove form pan onto cooling rack. Cool and frost (or not!) as desired. Makes about 20 - 24 cookies.
