Tomato Sauce for Pizza, Pasta, Etc.

From Dorothy McNett's recipes at If making this for a pizza sauce, use 1 cup of tomatoes. If making for a pasta sauce, use 2 cups of tomatoes and if necessary add some more liquid such as tomato juice or beef or veggie stock to get the consistency needed.

1 teaspoon oil or butter
1 pound lean ground meat
1/2 medium onion, finely diced
2-3 cloves garlic, finely minced
zest of 1 lemon
1-2 teaspoons lemon juice
1-2 cups chopped fresh or canned tomatoes (Pomi in a box)
1-2 tablespoons tomato paste
3-4 fresh basil leaves, finely snipped
1/2 teaspoon sea salt
freshly ground pepper

In saute pan, heat the oil and then add the ground meat, finely diced onion and garlic. Cook and stir, breaking up the meat so that it cooks evenly and is not left in chunks. Cook about 5 minutes and then add the zest and lemon juice, tomatoes, tomato paste, basil, salt and pepper. Bring to a boil, reduce to simmer and cook about 5-10 minutes to blend the flavors. Taste to make sure the seasonings are just the way you want them. More salt? More pepper? A pinch of sugar or honey?
