Prawns for "I Wanna Hold Your Pan!"

From Dorothy McNett's recipes at This great prawn dish has lots of great flavors. Inspired by the Beatles, 1964, "I Wanna Hold Your Hand".

fresh medium to large sized prawns, skinned and deveined
1-2 slivers of fresh or pickled ginger,diced
1-2 tablespoons soy sauce

4-5 tablespoons grapeseed oil (perhaps more)
3-4 cloves garlic, thinly sliced
6-8 fresh green beans, sliced into pieces
1/4 cup bread crumbs or Panko

1-2 teaspoons wasabi powder
1/4 cup mayonnaise
baby greens for serving
more soy sauce for sprinkling
slivered pickled ginger for serving

First skin and devein the prawns and place in a bowl. Stir in the ginger and soy sauce and set aside. When ready to cook, turn on the Beatles song "I Wanna Hold your Hand" and then decide who is going to 'hold the pan'. Use a stir-fry pan or a wok, or even a heavy bottomed saute pan will work. Place it over medium high heat, add enough grapeseed oil to a depth of about 1/8 inch. Cook and stir the garlic and green beans 2-3 minutes. Coat the prawns with the bread crumbs or Panko. Scoot the beans and garlic to the edge of the pan, add the prawns and cook and stir about 3 minutes. You may need to add more oil to allow them to cook nicely. Arrange on a beautiful serving platter along with the baby greens. In a small bowl combine the wasabi and mayonnaise to your desired level of heat. Serve as a dipping sauce with the prawns along with the soy sauce and ginger.
