The name for our salad dressing for this simple recipe is "Saure Rahmsauce fur Salat". Use any vegetables as desired, but especially use the butter lettuce. Cooking fresh beets in the microwave oven beats any other method of cooking to retain that glorious color and flavor and you won't have red beet juice all over the kitchen. No need to ever buy canned beets when you see how easy and wonderful this method is. 3 beets Wash the beets and then peel them, using a vegetable peeler. Place them in a glass or ceramic batter bowl and cover with a glass or ceramic lid. Cook in microwave (the vegetable cooker!) 7-8 minutes or until tender when pierced with a fork. Allow to stand to cool completely and then slice or dice as desired. When ready to serve, pour the sour cream into a bowl and whisk in the lemon juice, sugar, salt and pepper.
