Hungarian Noodles

From Dorothy McNett's recipes at www.dorothymcnett.com. These are easy to make, and can be cut into desired shapes. Noodles are not necessarily always long and skinny...many times Hungarian noodles are cut into 1 inch sized squares. Serve these with Chicken Paprikash.

2 cups all purpose unbleached flour
1/2 teaspoon sea salt
3 eggs
2-3 teaspoons water

1/2 teaspoon sea salt

In batter bowl, whisk the flour and salt. In another bowl, whisk the eggs very well. Add to the flour along with 2 teaspoons of the water. Blend to make a stiff dough, adding a bit more water if necessary. On a floured surface, roll dough into about a 20 by 15 inch rectangle. Cover with a clean towel or waxed paper and allow to rest about 15-20 minutes, then cut into squares about 1 inch in size. Bring a large pan of water to a boil, adding about 1/2 teaspoon salt after it has come to a boil. Add the noodles and boil for about 10 minutes, or until tender. Serve!
