Cauliflower Cheese Sticks

2-3 cloves garlic
1/2 head of cauliflower
1 1/2 - 2 cups mozzarella cheese
2 eggs, whisked
1 1/2 teaspoons dried oregano
1/2 teaspoon sea salt
freshly ground pepper or chili powder
fresh chives or green onions

Preheat oven to 425 degrees. Line a baking sheet with a silicone baking mat or parchment paper and set aside. Cut the cauliflower into flowerettes and measure out 2 cups of it. In food processor with steel chopping blade in place, whirl the garlic to mince it finely and then add the cauliflower pieces and process to finely mince it. Place in a glass or ceramic batter bowl, cover with a glass or ceramic lid. Cook in microwave 5 minutes. In meantime, grate the mozzarella and measure out 1 cup. Set aside the remaining 1/2-1 cup for the topping. Add the 1 cup of cheese to the cauliflower and then blend in the eggs and spices. Spread mixture out onto the prepared baking sheet into a rectangular shape. Bake 20-25 minutes, or until nicely browned. Sprinkle with the remaining cheese and snip on some chives. Bake about 5 minutes. Allow to cool a bit, slice into sticks and serve.
