Herb and Chia Dip or Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. The chia seeds will thicken, so feel free to add more liquids or tomato paste, etc. as desired to get your desired dipping consistency.

4 tablespoons water or white wine
1 tablespoon chia seeds, ground
1 tablespoon extra virgin olive oil
pinch of sea salt
freshly ground pepper
chopped fresh tomato, or use tomato paste or sauce
1/4 cup of so of snipped fresh herbs, such as parsley, basil, oregano, thyme, etc.

bread slices, bread sticks, croutons, vegetable sticks, etc for dipping

In a small bowl combine the water and ground chia seeds. Allow to stand about 10 minutes. Blend in olive oil, seasonings, tomato and herbs. Taste, adjust, add and etc. to get it to be a nice dipping consistency. Place in a beautiful bowl and serve with bread and vegetables for dipping. Or add more oil and make it a salad dressing.
