Brown Rice with Assorted Nuts and Onions

From Dorothy McNett's recipes at A great way to serve brown rice...lots of flavor packed with nutrition.

1 cup brown rice
2 2/3 cups water or unsalted broth

1 tablespoon grapeseed oil, or other oil or butter of choice
1 jalapeno pepper, or other pepper of choice
1/2 small onion, chopped
2-3 green onions, chopped
1/3 cup raw walnuts, chopped
1/3 cup raw pecans, chopped
1/4 cup raw peanuts, chopped
1/4 cup hemp seeds
salt and pepper, as desired

Cook the rice (see recipe for Brown Rice). While rice is cooking, chop the jalapeno and onions and saute for a few minutes in saute pan, using grapeseed oil or other oil or unsalted butter. Set aside. When rice is done, combine all ingredients and serve.
