Green Salad with Fresh Cherry Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. Use tons of local fresh greens such as lettuce (many varieties), cabbages, sprouts, dandelion greens, kale, chard, collard greens and more!!!

fresh greens

1/2 cup pitted fresh cherries
2 cloves garlic
1 teaspoon raw sugar
1/4 cup orange juice or port wine
3 tablespoons balsamic vinegar
1/4 teaspoon vanilla extract
1/3 teaspoon sea salt
freshly ground pepper
1/2 cup extra virgin olive oil

Wash and dry the greens and place in a beautiful bowl. In a glass or ceramic batter bowl combine the cherries, garlic, sugar, juice or port, and vinegar and cook in microwave 3 minutes. Stir, and cook another 1 -2 minutes if needed for the cherries to cook. OR, cook in a small saucepan over medium heat, stirring, for about 5-6 minutes. Allow to cool a bit and then puree the mixture in food processor or just with a potato masher, etc. Add the vanilla,salt and pepper and then blend or whisk in the olive oil Pour over the greens, toss and serve.
