Summer Relish

From Dorothy McNett's recipes at

1/2 cup white wine vinegar
3 tablespoons raw sugar
1 cup finely chopped yellow squash
1 cup zucchini, chopped
1 carrot, shredded
1 medium onion, chopped
1 green pepper, chopped
1/2 teaspoon dry mustard
1/4 teaspoon minced fresh ginger
1/8 teaspoon salt
1/4 teaspoon pepper
1 (2 oz.) jar sliced pimiento, drained

Combine all ingredients in glass or ceramic batter bowl. Cover. Microwave on High 8-10 minutes. Or, combine in heavy bottomed pan and cook on medium heat about 25-30 minues. Refrigerate several hours or overnight. Wonderful with meats, as a sandwich spread, etc.
