Enjoy local cherries when in season this way! 2 cups fresh local cherries Wash cherries well, do not remove the stems. Using a cherry pitter, remove the pit. Tear mint leaves into small pieces and roll up and then tuck it into the center of cherry. Place on paper towel to dry. Melt the dark chocolate in a glass measuring cup in microwave 45 seconds, stir, adding another 30 seconds to melt fully if necessary. Pat a cherry dry with a paper towel, dip into the chocolate and then place on silicone or parchment lined baking sheet. Do about 8-12 and then sprinkle them with a little salt and some hemp seeds.
