Cottage Cheese Pancakes

From Dorothy McNett's recipes at www.dorothymcnett.com. Too easy!!! A cross between a traditional pancake and an omelet, these are light and moist.

3 eggs
1 cup cottage cheese
2 tablespoons extra virgin olive oil
1/4 cup all purpose unbleached flour
1/4 teaspoon sea salt
1-2 teaspoons oil or butter, for frying
maple syrup, or other syrups (I like local honey)
fruits and sausage for serving as desired

Use a food processor of a blender, or even a beater. Just simply whirl the eggs and cottage cheese to blend nicely. Add the olive oil, flour and salt and whirl until mixture is almost smooth. Heat a griddle or a large frying pan with enough oil or butter to coat the bottom nicely. Pour about 1/4 cup of the batter for each pancake onto the hot pan. Cook until tops are bubbly and it appears dry. Turn and book to brown the second side. Place on warmed plates and serve with syrup and fruits, sausages, etc as desired.
