Raspberry Spinach Salad

From Dorothy McNett's recipes at www.dorothymcnett.com.

2 tablespoons raspberry vinegar
2 tablespoons raspberry jam
1/3 cup extra virgin olive oil
6-8 cups fresh spinach
1 carrot, julienned
3/4 cup macadamia nuts, or other nuts as desired
1 cup fresh raspberries
1-2 kiwi
sea salt, as desired, for sprinkling on top

In glass measuring cup whisk together the vinegar, jam and olive oil. Set aside. In a beautiful salad bowl, combine the spinach, carrot, mac nuts, raspberries and kiwi. Toss in the dressing and serve, sprinkled with salt as desired.
