Roquefort French Dressing / Salad

From Dorothy McNett's recipes at Make this wonderful dressing and then be creative with the choices of green lettuce, vegetables, cooked diced meats, fish, seafood, etc. The Roquefort cheese makes this extra special!

1/4 cup extra virgin olive oil
1/4 cup lemon juice or cider vinegar
1 tablespoon raw sugar
3/4 teaspoon sea salt
1/4 teaspoon paprika
1/4 teaspoon dry mustard
1/4 teaspoon freshly ground pepper

3 - 4 oz. Roquefort cheese
2 teaspoons water
a big bowl of local fresh green lettuce
other diced raw vegetables, as desired, etc.

In a glass measuring cup, whisk olive oil, juice or vinegar, sugar, salt, paprika, mustard, and pepper to blend well. In a small bowl blend the crumbled cheese with about 2 teaspoons water so that it will blend into the dressing nicely and then add it to the dressing. (If the Roquefort is quite soft, no need to add the water but it helps to make the dressing a bit creamier.) Toss into your choice of greens. Eat and enjoy!
