Sauteed Radishes with Cod or Salmon

From Dorothy McNett's recipes at Any grilled fish, chicken, meats, sausages, etc. are really nice served with this interesting side sauce.

1-2 tablespoons unsalted butter, or oil
12-18 radishes (assorted colors are great)
pinch of each sugar, salt, and pepper
2 tablespoons water or broth
2 tablespoons snipped chives
2-3 fresh basil leaves, snipped
2 tablespoons sour cream or yogurt

fresh cod or salmon steaks, as desired
paprika, salt and pepper
extra virgin olive oil for the pan
assorted olives, for garnish, as desired

In a saute pan with lid, heat the butter or oil. Add the radishes (slice in half if they are large). Cook and stir several minutes. Add the sugar, salt and pepper, and then stir in the water or broth. Cover. Reduce to simmer and cook 3-4 minutes until the water has evaporated and the radishes are tender but still a bit firm when pierced with a fork. Add the snipped chives and basil. Remove to a serving dish and set aside while you cook the salmon.
Rub some paprika, salt and pepper over the fish steaks. In a heavy bottomed saute pan or grill pan, heat a little oil just to coat the bottom of the pan a bit. Add the seasoned steaks and cook several minutes on each side, or until nicely browned and the flesh is tender. Place on serving plates. Add the sour cream or yogurt to the radishes and arrange the radishes around the steaks. Garnish with olives. Serve!
