Sauteed Radishes with Cod or Salmon
From Dorothy McNett's recipes at www.dorothymcnett.com. Any grilled fish, chicken, meats, sausages, etc. are really nice served with this interesting side sauce.
1-2 tablespoons unsalted butter, or oil
In a saute pan with lid, heat the butter or oil. Add the radishes (slice in half if they are large). Cook and stir several minutes. Add the sugar, salt and pepper, and then stir in the water or broth. Cover. Reduce to simmer and cook 3-4 minutes until the water has evaporated and the radishes are tender but still a bit firm when pierced with a fork. Add the snipped chives and basil. Remove to a serving dish and set aside while you cook the salmon.
