Feta ala Tofu

From Dorothy McNett's recipes at www.dorothymcnett.com.

1 package extra firm tofu
2 cups water
juice of 2 lemons
1 tablespoon sea salt
2 teaspoons dried basil
2 teaspoons dried oregano
2 tablespoons nutritional yeast

Drain the tofu, and then cut into small cubes. Place in saucepan and add the remaining ingredients. Bring to a boil, reduce to a low simmer. Simmer, uncovered, for 30 minutes. Cool. Use for appetizers, salads, sandwiches, etc.
