From Dorothy McNett's recipes at www.dorothymcnett.com. When you do not have time nor need a large pot roasted sauerbraten, use this! It is simply a very flavorful peppered steak in a great sauce.
2 tablespoons red wine
In a glass or ceramic bowl, combine the red wine, vinegar, sugar,salt, pepper, juniper berries, bay leaf, cloves, mustard seeds and 1/2 onion. Marinate the steaks in this mixture 30-45 minutes or so. When ready to cook, remove the steaks. Strain the marinade, reserving the liquid. In heavy bottomed fry pan or saute pan, heat the 2 tablespoons butter or oil and saute the diced onion 2-3 minutes. Scoot to the side of the pan and add the steaks. Cook to your desired doneness and place on serving plates. Add the strained liquid to the pan and whisk in the gingersnap crumbs or flour. Cook and whisk to make a nice gravy, adding the sour cream to warm it. Pour sauce over the steaks or along side of them, and serve with some lingonberry jam as a garnish.
