Avocado Tomato Soup (or Sauce)

From Dorothy McNett's recipes at www.dorothymcnett.com. To make this as a sauce to put over other foods, sandwiches, etc. do not add the tomato juice or the yogurt.

1 red ripe tomato, quartered
2 avocados, peeled and sliced
1 red or green bell pepper, quartered
1 shallot, or small onion
zest and 2-3 tablespoons lemon juice

3-4 cups tomato juice
1 cup plain yogurt
2-3 green onions,chopped
salt and pepper, to your desired tastes

In food processor with steel chopping blade in place, blend the tomato, avocado, pepper, onion, zest and lemon juice. If making a sauce, it is done right now! If making a soup, remove ingredients from processor and whisk in the tomato juice, yogurt, green onions, salt and pepper. Chill and serve cold, or heat it but do not let it boil. Serve hot. Great either way!
