Avocado Tomato Soup or Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. To make this as a sauce to put over other foods, sandwiches, etc. do not add the tomato juice or the yogurt. Either way, this is delicious using fresh local ripe produce!

1 red ripe tomato, quartered
2 avocados, peeled and sliced
1 red or green bell pepper, quartered
1 shallot, or small onion
zest and 2-3 tablespoons lemon juice

3-4 cups tomato juice
1 cup plain yogurt
2-3 green onions,chopped
salt and pepper, to your desired tastes

In food processor with steel chopping blade in place, blend the tomato, avocado, pepper, onion, zest and lemon juice. If making a sauce, it is done right now! If making a soup, remove ingredients from processor and whisk in the tomato juice, yogurt, green onions, salt and pepper. Chill and serve.
