Herb and Garlic Burgers

From Dorothy McNett's recipes at www.dorothymcnett.com.

1 pound lean ground beef
2-3 cloves garlic, very finely minced
1/2 teaspoon sea salt
freshly ground pepper
1 teaspoon honey

drizzles of olive oil
1 tablespoon flour (all purpose, or gluten free)
1 teaspoon dried herbs (Herbe de Provence, etc.)
1-2 tablespoons freshly snipped oregano or other herbs as desired
hamburger buns
mustard, mayo and catsup as desired
lettuce and fresh sliced tomatoes

In bowl combine the ground beef, garlic, salt, pepper and honey and with hands mix completely and form into patties. Drizzle each patty with oil, and then pat on the flour and herbs, making sort of a crust. Heat a heavy bottomed saute pan or grill pan, adding just a bit of oil so that the meat will not stick when it hits the hot surface. Add burgers and cook 2-3 minutes on one side, do not "smash" the patty with a spatula as that releases the precious juices. Turn over, cook to your desired doneness. In meantime, prepare the buns as desired with mustard, etc. Don't forget the lettuce and sliced fresh tomatoes!!!
