Drizzle each patty with oil, and then pat on the flour and herbs, making sort of a crust. Heat a heavy bottomed saute pan or grill pan, adding just a bit of oil so that the meat will not stick when it hits the hot surface. Add burgers and cook 2-3 minutes on one side, do not "smash" the patty with a spatula as that releases the precious juices. Turn over, cook to your desired doneness.
