If you can get those wonderful sweet baby peppers, they are great roasted and then served like this. 1 tablespoon olive oil Combine oil, onion, garlic, and cumin in glass or ceramic batter bowl. Cook in microwave 2 minutes. Add the diced chilies, shredded cheese and half and half. Cook another 2 - 3 minutes. Stir to finish melting the cheese. Serve over crisp tortilla chips.
