Chilies and Cheese over Tortilla Chips

From Dorothy McNett's recipes at www.dorothymcnett.com. If you can get those wonderful sweet baby peppers, they are great roasted and then served like this.

1 tablespoon olive oil
1/2 cup finely chopped onion or shallot
1 - 2 cloves garlic, minced
1/4 teaspoon cumin
1 (4 oz.) can diced green chiles, or your own roasted green chiles (about 1/2 - 3/4 cup diced)
2 cups shredded cheddar cheese
1/2 cup half and half
crisp tortilla or corn chips

Combine oil, onion, garlic, and cumin in glass or ceramic batter bowl. Cook in microwave 2 minutes. Add the diced chilies, shredded cheese and half and half. Cook another 2 - 3 minutes. Stir to finish melting the cheese. Serve over crisp tortilla chips.
