Apple and Pea Salad

From Dorothy McNett's recipe at www.dorothymcnett.com. What a delicious way to get your apple a day along with lots of greens and a great homemade olive oil dressing. Create and enjoy! Use a variety of greens, such as baby spinach along with crispy romaine, etc.

fresh local lettuce and other greens, as desired
1 - 2 apples
1 cup or more of fresh (or frozen) petite peas
1/4 - 1/3 cup extra virgin olive oil
2 tablespoons vinegar or lemon or orange juice (and the zest)
1/4 - 1/2 teaspoon dried herbs of choice, or snipped fresh herbs
1 teaspoon local honey
sprinkles of sea salt

Wash and pat dry the greens and place in a beautiful salad bowl, tearing them as needed. Dice the apple (do not peel) and add to the salad bowl along with the peas. I use the frozen ones a lot and just put them in right out of the freezer. In a glass measuring cup whisk the olive oil, vinegar or juice and the zest, herbs, honey and salt. Toss over the salad and serve!
