Green Tea Almond Cream Dessert

From Dorothy McNett's recipes at www.dorothymcnett.com. The blending of 2 popular flavors to make a wonderful creamy dessert to serve with fruits and crispy cookies. Makes about 6 servings.

1 cup hot green tea
1/4 cup raw sugar
1 envelope unflavored gelatin
2 cups almond milk
1 teaspoon almond extract

mandarin oranges, or canned lychees
almond cookies or fortune cookies, etc. as desired

Make the tea extra strong by using 2 tea bags or allow to steep long enough to develop lots of flavor, then remove the tea bag. Stir in the sugar and gelatin and allow to stand several minutes to dissolve. If necessary, heat for 30-40 seconds in microwave so that the sugar will dissolve totally. Blend in the almond milk and extract. Pour into a shallow mold or into individual serving dishes. Refrigerate several hours. Serve with fruits placed on the top, and a crispy cookie on the side.
