Chinese Marinade

From Dorothy McNett's recipes at www.dorothymcnett.com. Make this and use for Chinese Chicken Salad, or toss into any green salad as the dressing.

1 large clove garlic, very finely minced
1/4 cup soy sauce
2 tablespoons oil (olive oil, etc..)
2 teaspoons raw sugar
1/4 cup pineapple or orange juice
1/2 teaspoon mustard
1/2 teaspoon ground ginger
1/8 teaspoon freshly ground pepper

Combine all ingredients in a saucepan and simmer 3-5 minutes, stirring. Or, combine in a glass measuring cup and heat in microwave for 1 minute. Stir, and heat another 30-45 seconds. Allow to cool and then use as a wonderful marinade for chicken, shrimp, etc. as well as the base for a great tossed salad dressing
