Sweet Potato Appetizer or Salad

1 sweet potato
1-2 ribs of celery
1 red ripe tomato
1/2 cup or so of diced olives
baby greens
Scrub the potato and peel away blemishes, leaving most of the peeling on. Place in a small bowl and bake in microwave for about 3 minutes, or until tender. In meantime dice up the celery, tomato and olives, adding additional seasonings if necessary but the olives usually have enough great flavor! Place baby greens on a platter. Slice sweet potato into circles about 1/4 inch thick. Arrange on greens and dollop with the diced mixture. Serve!
