Swiss Onion Soup

From Dorothy McNett's recipes at Make your own vegetable or beef broth or use a good quality ready made one.

3-4 slices bacon or sausage, etc.
2-3 large onions
3-4 cups vegetable or beef broth
pinches of salt, if needed (depends on the broth)
grated Swiss cheese or feta cheese, if desired

In a heavy bottomed skillet, cook the bacon until nicely browned and crisp. Remove bacon to paper towel lined baking sheet. Keep about 1 tablespoon of the bacon fat in the pan, discarding any extra. Slice the onions into very thin slices and cook in the bacon fat for about 5-8 minutes, until very tender and starting to brown a bit. In a saucepan, heat the broth to the boiling point and then add the cooked onions and the chopped cooked bacon. Taste, adding salt if needed. Garnish with a bit of grated cheese, or chunks of feta cheese, as desired.
