Green Salad with Creamy Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. This is great to make when you have just roasted or cooked some fresh pumpkin or winter squash.

fresh local greens, of choice (lettuce, chard, kale, spinach...)
radishes, sliced
1-2 green onions, sliced
pomegranate seeds or pumpkin seeds, or other seeds as desired

1/3 cup pumpkin or squash puree, freshly made or good quality canned
3 tablespoons vinegar
3 tablespoons mayonnaise
2-3 cloves garlic, finely minced
1 teaspoon honey or raw sugar
1/2 teaspoon sea salt
few grindings of pepper
1/2 cup extra virgin olive oil

Toss the greens, radishes, onions and seeds into a beautiful salad bowl. In glass measuring cup or bowl, whisk together the pumpkin or squash puree, vinegar, mayonnaise, garlic, honey or sugar, salt and pepper to make a smooth creamy mixture. Whisk in the oil. Toss into the salad and serve!
