This is great to make when you have just roasted or cooked some fresh pumpkin or winter squash. fresh local greens, of choice (lettuce, chard, kale, spinach...) Toss the greens, radishes, onions and seeds into a beautiful salad bowl. In glass measuring cup or bowl, whisk together the pumpkin or squash puree, vinegar, mayonnaise, garlic, honey or sugar, salt and pepper to make a smooth creamy mixture. Whisk in the oil.
