Pumpkin or Squash Seeds

From Dorothy McNett's recipes at www.dorothymcnett.com. Messy but a nice way to use those seeds...and if you have the oven on anyway while baking something else, you might as well do this.

1-2 cups rinsed pumpkin or acorn squash seeds, etc.
1 teaspoon sea salt
1 teaspoon raw sugar
1/4 teaspoon pepper, or cayenne, as desired
1 tablespoon extra virgin olive oil

Preheat oven to 350 degrees. Rinse the seeds in a colander, removing as much of the pumpkin membrane as possible. Shake to remove moisture so that the seeds are mostly dry, not sopping wet. Toss everything together in a bowl, and then scatter over a baking sheet. Bake about 15 - 20 minutes. Allow to cool completely before using.
