Chocolate Apple Loaf Cake with Pumpkin Pudding

From Dorothy McNett's recipes at www.dorothymcnett.com. A great fall time dessert, or anytime of the year for that matter! Serve with Pumpkin Pudding!

2 cups all purpose unbleached flour
3/4 cup unsweetened cocoa powder
1 tablespoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon sea salt
1 1/2 teaspoons baking powder
1/2 teaspoon soda
3 eggs
3/4 cup extra virgin olive oil
1 cup raw sugar
1 teaspoon vanilla extract
2 cups unpeeled apples, medium diced

Pumpkin Pudding (see recipe)

Preheat oven to 350 degrees. Butter a loaf pan and set aside. In a bowl whisk together the flour, cocoa powder, cinnamon, allspice, salt, baking powder and soda and set aside. In batter bowl whisk or beat the eggs very well, adding the oil, sugar and vanilla. Using a spoon or a spatula, fold in the dry ingredients along with the diced apples. Pour into the loaf pan. Bake 45-55 minutes, or until nicely browned. Place on a cooling rack, allow to cool before slicing. Serve with Pumpkin Pudding, or whipped cream, ice cream, etc.
