Walnut and Brussel Sprout Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Delicious and nutritious, and easy, too! Just a basic salad technique, so add or subtract ingredients as desired.

5-6 or more fresh brussel sprouts, shredded or chopped
1 apple, unpeeled, shredded or chopped
1 cup raw walnuts, chopped a bit
1/3 cup Parmigiano Reggiano cheese, shredded
1/3 cup extra virgin first cold pressed olive oil
zest and juice of 1 orange, or grapefruit
1/2 teaspoon honey or raw sugar
1/2 teaspoon sea salt
freshly ground pepper, as desired

Carefully wash the brussel sprouts and then shred or chop them and place in a beautiful salad bowl. Add the apple, walnuts and cheese and toss together. In a glass measuring cup, whisk together the oil, zest and juice of the orange, honey or sugar, salt and pepper. Pour over the salad, toss and serve.
