Now add the peas, sour cream, zest and lemon juice, cumin and salt. Process to blend well, adding just enough wine or water to get a dipping consistency. (If not using a processor, this can be done by finely dicing and mashing with a potato masher, etc.) Remove pea mixture to a bowl and stir in the diced tomatoes and sliced onions.
