Garbanzo Bean / Chick Pea Appetizers

From Dorothy McNett's recipes at Also known as garbanzo beans. You can easily double this recipe, which is a good idea if cooking for a party. These are also called nibbles, and people just stand around and nibble them while drinking their wine! Feel free to add spices and seasonings as desired...a little cayenne or chili pepper for a Mexican, a little curry powder for Indian, a little dried basil for Italian, etc....

1 can (15 oz.) chickpeas or garbanzo beans
1 tablespoon extra virgin olive oil (garlic infused is great here!)
1/4 teaspoon freshly ground pepper
1/4 - 1/2 teaspoon sea salt (herbed sea salt is great!)

Preheat oven to 400 degrees. Drain the can of chickpeas in a colander or sieve, and rinse with cold water. Pat dry with paper towels. Dump them out onto a baking sheet with sides and toss in the oil, pepper and salt to coat evenly. (and other dried herbs or seasonings as desired) Bake about 20 - 30 minutes, or until they start to brown and also shrink up a bit and are crispy. If they appear to be cooking unevenly, stir them at least once or twice and cook for a few more minutes. Allow to cool and serve!
